3 More simple dinner ideas.

Times are getting rough and inflation rates are crazy right now, so I want to give you some of my CHEAP easy and fast dinners.

  1. Shrimp Scampi
Hello fresh shrimp scampi Inspiration meal.

This recipe is one of my go-to’s because it consist of 4 main ingredients and takes about 15-20 min to make. Let me give you the run down.

What you will need:

  • Shrimp
  • Spaghetti noodles
  • Broccoli
  • Lemon
  • Garlic
  • Olive oil
  • butter
  • salt
  • pepper

I start with pre-heating my oven to 450. Hot I know, but I don’t like waiting for food to cook in the oven. Also one of the great reasons my dinner recipes are quick! before the oven gets too hot, move your oven rack to the very top row. Now chop up your broccoli or don’t, its your food. Then place it on a backing sheet and drizzle with olive oil, salt and pepper. While that cooks, make your noodles. In a pan heat up some butter and garlic until it smells fragrant. Add in a little salt and pepper and I put oregano and chili flacks to spice it up more. Then add in your shrimps cook those until they are pink. If you bought pre-cooked shrimp my pro-tip would be to marinate them. This allows for the flavors to get soaked up since it won’t happen during the cooking process. After your shrimp is cooked take out your broccoli and toss in along with the spaghetti noodles and shrimp. plate then boom! Yet another beautiful dinner 🙂

2. Creamy Poblano Pepper Pasta with garlic butter chicken.

Ingredients

  • poblano peppers
  • cilantro
  • heavy cream
  • garlic
  • salt
  • pepper
  • fettachini noodles
  • chicken
  • butter
  • garlic powder
  • oil
  • vegetable broth

This meal is so gooood, but if you’re not the biggest fan of very spicy foods then don’t make the mistake I did and roasted my peppers with the seeds still inside.

Ok, first things first, roast your peppers. I have an electric stove so I broiled mine in the oven. Then get your chicken seasoned so it can marinate on the side. This ones super easy since the pasta dish is the star of the show here. Season the chicken with salt, pepper and garlic powder. Optional but I added a little onion powder as well just because I like the two spices together. Next get those noodles boiling. And in a blender or food processor, add in cilantro, garlic, salt, pepper a little bit of oil and those poblano peppers chopped up. Blend until it looks something like pesto. Then add in your heavy cream and vegetable broth. Blend some more until it looks creamy.

Note: if your sauce is not coming out creamy add more oil slowly and heavy cream.

Once the sauce is combined, heat a pan with a drizzle of olive oil, once it’s hot drop the chicken in AWAY from you and cook until temp is 165 degrees. When the chicken is done set aside too cool. Drain noodles and combine sauce, mix all together and cut the Chicken into strips. Serve and enjoy!

3. Broccoli and Shrimp Rice Bowl.

Yes, I love shrimp and broccoli. It’s just a really good combo. Anyways this one has to be one of my easiest. For starters you’ll need…

  • Rice (white or brown)
  • Broccoli
  • Shrimp
  • Old bay seasoning
  • Salt
  • Pepper
  • cajun seasoning
  • Garlic powder
  • Butter

Preheat your oven to 400 degrees. Chop up your broccoli so they are bite size pieces and throw them on a sheet pan with a little olive oil, salt, and pepper. Then put them in the oven on the very top rack. Now wash and season your shrimp. Season with Old Bay seasoning, salt, pepper, cajun seasoning and garlic powder. Now in a pan add a “healthy” amount of butter and let it melt down some. After it’s almost melted, add in your shrimp. Cook the shrimp until they are pink or if you bought the pre cooked shrimp cook until you want to take them out! While the shrimp cooks make your rice. I cheat every time and use a rice cooker or minute rice. my personal fave is minuets rice, because talk about quick and easy. After your shrimp is done take out the broccoli and assemble how you will. I mixed the shrimp and broccoli together before putting it on my rice. Walla! Did you impress yourself!?
