  • 9 oz Italian Chicken Sausage Mix
  • 6 oz Rigatoni Pasta
  • 2 Scallions (separate those whites from the greens!)
  • 1 Bell Pepper
  • 1.5 oz Tomato Paste
  • ¼ cup Parmesan Cheese 
  • 1 TBSP Italian Seasoning
  • 4 oz Cream Sauce Base
  • 1 tsp Sugar
  • 1 tsp Olive Oil
  • 1 TBSP Butter
  • Salt and Pepper to taste

Instructions:

Step 1:

Start by bringing a medium pot of salted water to a boil. While you’re waiting, wash and dry your produce. Core, deseed, and dice that bell pepper into cute little pieces. Then, trim and thinly slice the scallions, keeping the whites and greens separate.

Step 2:

Heat a drizzle of olive oil in a large pan over medium-high heat. Toss in the diced bell pepper and let it cook until it’s lightly browned and slightly softened—about 3-4 minutes.

Step 3:

Add the Italian chicken sausage mix and the scallion whites to the pan. Break the meat up into pieces and cook until it’s all browned and cooked through, about 4-6 minutes. Season with salt and pepper—because you want those flavors to pop!

Step 4:

Once your water is boiling, add the rigatoni. Cook it, stirring occasionally, until it’s al dente (about 9-11 minutes). Pro tip: save ½ cup of that pasta cooking water before draining!

Step 5:

While your pasta is cooking, stir the Italian seasoning, tomato paste, and 1 tsp of sugar into the pan with the sausage mixture. Make sure everything is coated nicely. Pour in ¼ cup of plain water and bring it to a simmer for about a minute.

Step 6:

Now it’s time to lower the heat! Add the cream sauce base to the pan and stir in 1 TBSP of butter until it’s all melted and creamy. Adjust the seasoning with salt and pepper to your taste.

Step 7:

Drain your rigatoni and add it to the pan with that luscious sauce. Toss everything together until the pasta is coated beautifully. If it looks a little dry, add the reserved pasta cooking water a splash at a time until you get that creamy texture.

Step 8: Serve It Up!
