Gone are the days when a vegan Thanksgiving meant just a salad and a sad side of mashed potatoes. Nope, we’re talking about mouthwatering dishes that will leave even the most committed carnivores wanting more. From savory mains to indulgent sides and even dessert (oh yes, there’s dessert!), I’ve got you covered with recipes that bring all the holiday joy and none of the animal products.
Let’s dive into the festive vegan deliciousness, shall we?
1. Vegan Stuffing: The Ultimate Holiday Side
Stuffing is a classic that absolutely cannot be missed at Thanksgiving. This vegan version is savory, herb-packed, and just as hearty as its non-vegan counterpart. With toasted bread cubes, sautéed onions, garlic, celery, and lots of fresh sage, it’s everything you want in a Thanksgiving side.
Ingredients:
- 1 loaf of day-old sourdough or whole-grain bread (cut into cubes)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup vegetable broth
- 1 tsp dried thyme
- 1 tbsp fresh sage, chopped
- Salt and pepper, to taste
- 1/2 cup fresh parsley, chopped
Directions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the onion and celery, and sauté for about 5 minutes until softened. Add the garlic and cook for another minute until fragrant.
- In a large bowl, combine the bread cubes, sautéed veggies, vegetable broth, thyme, sage, salt, and pepper. Toss until everything is well-coated.
- Transfer the mixture to a greased baking dish and cover with foil. Bake for 25 minutes, then remove the foil and bake for another 10-15 minutes until the top is golden and crispy.
This stuffing pairs beautifully with roasted vegetables or even a vegan mushroom gravy! And if you’re looking for the perfect baking dish to bring this dish to life, a sturdy glass or ceramic casserole dish will make sure your stuffing bakes to perfection every time

3. Vegan Mashed Potatoes: Creamy and Dreamy
You can’t have Thanksgiving without mashed potatoes, and this vegan version is every bit as creamy and rich as the traditional kind. The secret? A little bit of vegan butter and cashew cream to make these mashed potatoes extra indulgent.
Ingredients:
- 4 large Yukon Gold potatoes, peeled and chopped
- 1/4 cup vegan butter
- 1/2 cup unsweetened almond milk (or any plant-based milk)
- 1/4 cup cashew cream (see below for how to make it)
- Salt and pepper, to taste
Directions:
- Boil the potatoes in a large pot of salted water until fork-tender (about 15 minutes). Drain and return them to the pot.
- Add the vegan butter, almond milk, and cashew cream to the potatoes. Mash until smooth and creamy.
- Season with salt and pepper to taste, then serve hot.
Cashew Cream: Blend 1/2 cup raw cashews with 1/2 cup water until smooth. This is your secret weapon for creamy dishes!
These mashed potatoes pair perfectly with everything on your vegan Thanksgiving table, from stuffing to roasted Brussels sprouts.
4. Vegan Pecan Pie: A Sweet Finish
