Tuscan Beef Stuffed Peppers. With Pearled Couscous and Melted Mozz.

Want quick? Want easy? Want Deelicious? Well, you know I got you covered. On this week’s menu, we have Tuscan Beef Stuffed Peppers! So easy if you mess it up it’s time to retire from cooking… jokes but for real its dummy proof.

Gather up your ingredients!!

  • 2 green bell peppers
  • 1/3 cup Israel couscous
  • 1 yellow onion
  • 1 roma tomato
  • 1.5 lbs ground beef
  • 1 TBSP
  • 2.5 oz Marinara sauce
  • 1 tsp chicken stock concentrate
  • 1/2 cup mozzarella cheese
  • 1 TSBP Butter
  • 3/4 cup water
  • salt
  • pepper
  • cooking oil

Break out…

  • Baking sheet
  • Small pot
  • Cast iron pan or oven safe

I first made this meal when I first subscribed to hello fresh (A home meal delivery service). It literally took me no time to make and all the ingredients they had sent me, I already had in my house. I guess you can really thank hello fresh for my TikTok videos. One of my biggest struggles with cooking is portion sizes. and with portion sizes comes a lot. Like wasting food because I would have way to many leftover for just myself. And overspending on things I never ate and go rotten.

Ok, ok lets get into it shall we…

Step one: Preheat oven to 425 degrees. Wash and dry your produce.

Step two: Cut the tops off bell peppers and gut the inside. Place on baking sheet and drizzle with a little olive oil, salt and pepper. Rub and coat. place them cut side down and roast in the oven for 18-20 minutes.

  • I kept mine in until I was done cooking the rest. Did I forget?… maybe, but my mistake made the peppers softer and more savory!

Step three: While peppers roast. In a small pot over medium heat, melt down 1 TBSP of butter. Add couscous and a pinch of salt and pepper. Stir in 3/4 cup water and bring to a boil. Once boiling reduce heat to low and cover.

  • Hopefully your couscous turns out good. It’s just as hard to cook as rice is, in my opinion.

Step four: Half, peel and dice half the onion. Finley dice tomato.

Step five: Heat a drizzle of olive oil in a large pan over medium heat and add onion. Cooking until softened. 4-5 minutes. Add beef and seasonings with salt and pepper. Cook breaking up the beef until browned. 5-10 minutes.

*tip* If there’s any extra grease in your pan, carefully pour it out.

Step six: Add marinara sauce and tomato to pan with beef mixture. Stir in stock concentrate and 1/3 cup water. Season with salt and pepper. Simmer until slightly thickened. 1-2 minutes. Stir in couscous.

Step seven: Take out bell peppers and stuff with meat mixture. Like stuff it. Place stuffed peppers in oven safe pan with the remaining meat mixture and top with mozzarella cheese.

Step eight: Place pan in oven on broil for 5 minutes or until cheese is melted. Take out of oven, do your pretty plating and…

Step nine: SERVE!!
