Thanksgiving and Christmas are just around the corner, which means it’s time to break out the cozy sweaters, light the candles, and start preparing some delicious meals that will make your home smell like a fall wonderland.
🍂 Cozy Apple Cinnamon Streusel Muffins 🍏
These warm, soft muffins are everything you want in a fall treat. They’re full of apples, cinnamon, and brown sugar with a sweet streusel topping—perfection in every bite. You’ll want to make a batch (or two) for your Thanksgiving or Christmas table, or just as a cozy snack while you wrap gifts.
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup brown sugar (packed)
- 1/2 cup white sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter (melted)
- 1 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 2 medium-sized apples (peeled and chopped)
For the Streusel Topping:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar (packed)
- 1/4 cup rolled oats
- 1/4 tsp ground cinnamon
- 1/4 cup unsalted butter (cold and cubed)
Directions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
- Make the streusel topping: In a small bowl, combine the flour, brown sugar, oats, and cinnamon. Add the cold butter and use a fork or pastry cutter to cut the butter into the dry ingredients until it forms pea-sized crumbs. Set aside.
- Make the muffin batter: In a large mixing bowl, whisk together the flour, brown sugar, white sugar, baking powder, baking soda, cinnamon, and salt. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract until combined.
- Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped apples.
- Fill the muffin tins: Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping generously over each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Enjoy these warm, fluffy muffins with a cup of coffee or tea. Perfect for breakfast, a snack, or even as a dessert with a little drizzle of caramel sauce!
