Directions:

Step One: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and cornstarch to make the teriyaki sauce. Set aside.

Step Two: Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Step Three: In the same skillet, add the remaining tablespoon of vegetable oil. Add the mixed vegetables and stir fry until crisp-tender, about 4-5 minutes.

Step Four: Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce over the chicken and vegetables, stirring to coat everything evenly.

Step Five: Continue to cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
