Easy Breakfast Ideas, for Busy or Lazy Mornings.

This is going to be a super quick post. Like max reading time, about 5 minutes. I wanted to share my favorite breakfast meals. I have recently been on a breakfast train with eating breakfast every morning. If you have been keeping up with me you know that I rarely make the same foods. if you haven’t I made a little About Me page you can go check out!

For starters let me tell you the most essential part about my morning breakfast. An Egg. If my breakfast doesn’t of an egg, then it’s not breakfast. Sorry to my vegan readers. I ate eggs so much for breakfast I was getting sick of them, and that count happen. So I started making eggs in different ways. And to start, I hade this breakfast yesterday morning actually and let me tell you AMAZING!

This recipe was thrown together with ingredients I had left in my pantry. With only 4 ingredients not including toppings. This recipe was the quickest, warm, and filling breakfast I’ve made. I heated up a pan with butter and attempted to cut a somewhat circular hole in a tortilla.

I put the tortilla in the pan and cracked the egg in the “hole”. I then seasoned with salt, pepper, and cumin. waited for it to cook to my desired doneness and topped with parsley and sautéed peppers. It was amazing I reckoned you try.

My next favorite recipe took some trail and error, cooking anything with a potato takes trial and error. It’s because depending on the size of potato and how you cook it, it varies. And for this recipe halving a potato and popping it in the oven with the rest of my ingredients was not it.

Twice Baked Breakfast Potatoes.

This breakfast has the same concept of the one before but instead of a tortilla, it’s a potato. This one is consist of potatoes, eggs, cheese, salt and pepper. I baked the potatoes the night before because I knew I wanted them at some point.

But if you don’t plan meals a day before, I never use to, then just stab it and pop it in the microwave with a wet paper towel. Pre-heat you oven to 400 degrees and cook until your egg is to your liking.

While those recipes are pretty much the same this next one takes a turn for the better. This recipe my mom made all the time. It’s a mix of an omelet and scrambled eggs. A scrambled omelet you say? No, it’s better.

Im not sure what else to call this but messy omelet sticks with me. i’ll have to make a full recipe on this one because, it’s just that good. The secret to making the breakfast scrambled while also holding an omelet shape is heating up a pan half full of water and vegetable oil.

whisk up some eggs and prepare what ever topping you want inside. one the water oil mixture is heated add all the good stuff in, turn down the heat and cover. Let it cook until you can lift it with a spatula. Wala! yummy, scumpsious breakfast!
