The Best Simple Dinner Ideas.
As a college student, making dinner every night is just not an ideal thing to do. Ultimately, the easiest, quickest and cheapest thing to do is going to buy take out. Now everyone knows eating fast food every night isn’t healthy in any sense but also takes the joy away from a home cooked meal. Which I noticed a lot of my friends miss about living at home. Going to school in a small town with very limited food options forced me to develop a list of ten of my favorite dinners that are quick, cheap and easy!
Let’s dive right into my first recipe, Disclaimer I found all these recipes online and modified them but in no way came up with them myself.
- Caprice Chicken Dinner
The main ingredients for this recipe include:
- Chicken breast
- Pre-made pesto
- Tomatoes
- Mozzarella Cheese
Take your chicken breast and beat the shit out of it so its somewhat flatten. Then, season with your choice of seasoning.I kept this one simple. I used salt, pepper, and oregano. Next, pop those nicely seasoned breast onto an oven safe dish and now to the fun part! Drizzle a little olive oil on to the chicken Brest then layer with the remade pesto, sliced tomatoes and sliced mozzarella. This part is fun because you can modify it how you want. One time I used mozzarella balls and it looked like a cute little caprice chicken pizza! Optional but all caprice have it fresh basil. Pro tip: Basil tends to cook really fast in the oven so drizzle more olive oil over top or put your basil on halve way, that’s what I do! It taste so fresh. In the oven for 25 min or until the chicken is 165 degrees. Serve in the dish or one of your fancy plates, because after all a true chef has the best cook ware.

2. Black Bean Taquitos
This one is for my vegetarians and vegans, this recipe consist of 3 main ingredients, Black beans and Tortilla wraps.
- Can of black beans
- Flour tortillas
- Vegetable broth
- Seasoning of your choice
- Dip/ Sauce of your choice
Super simple, in a pan throw in a can of beans, seasoning of choice (onion powder, garlic powder, paprika, cumin, salt, pepper, oregano) and measure with your heart it taste better! mix it up then add in half of your vegetable broth. bring that to a simmer then mash your beans. Trust me it looks gross but if you prefer whole beans skip this step! after its simmered down to a mushy gushy consistency its done! take it off the heat and put them in the tortillas. Next pop your stuffed rolled up tortillas on a backing tray and back for 15 min or until crispy. There you have it black bean taquitos. make any sauce you want I just snatched an avocado with sour cream salt and pepper and drizzles in water till I got a saucy consistency.

3. Burgers and Fries
This recipe requires more steps than the ones above but still puts out a great impressive dinner. What you will need:
- Hamburger meat
- Lettuce (optional)
- Tomatoes (optional)
- Onions (optional)
- Hamburger buns
- Potatoes
- Seasonings of your choice
The way I made this recipe simple is by simply taking the hamburger meat and seasoning it with my favorite seasonings. (salt, pepper, paprika, onion powder, garlic powder, Italian seasoning, and oregano) and the same with the cut potatoes.
A really simple trick I do when making quick easy meals is pre- heating my oven to 450 and popping my potato wedges on the very top rack to make sure they crispy up. this also helps you when cooking, because you don’t have to worry about the side dish!
After that cook your burgers how ever you see fit and assemble. don’t forget your potatoes in the oven…I tend too. Boom, there you have it super impressive and super quick. Now go tell everyone it took you hours!
