4 large whole wheat or spinach tortillas

One cup hummus (store-bought or homemade)

1 large carrot, julienned or grated

One medium cucumber, thinly sliced

1 bell pepper (any color), thinly sliced

1/2 red onion, thinly sliced

2 cups mixed greens (such as spinach, kale, or arugula)

1/4 cup fresh herbs (such as cilantro, parsley, or basil), chopped

Juice of 1 lemon

Salt and pepper, to taste

Instructions:

Step one: Lay out the tortillas on a clean work surface.

Two: Spread a generous layer of hummus onto each tortilla, covering it evenly from edge to edge.

Three: Layer the julienned or grated carrot, sliced cucumber, bell pepper, and red onion on top of the hummus.

Four: Sprinkle the mixed greens and chopped fresh herbs over the vegetables.

Five: Squeeze the lemon juice over the veggies and season with salt and pepper to taste.

Six: Carefully roll up each tortilla, tucking in the sides as you go, to form a tight wrap.
